Tempura Batter Mix


I'm so excited to share with you my newest GF find, Tempura Batter Mix by Holgrain. I purchased mine at Whole Foods but you can also buy it online. I am a HUGE sushi fan and have been longing for this treat for 3+ years, since my Celiac Diagnosis. Well, I have to stay it was worth the wait! You can use this batter for seafood and vegetables or whatever your heart desires. We made some shrimp tempura rolls with avocado, cucumber, green onion, and spicy mayo sauce. My absolute favorite was our spicy hand rolls with the same mixture in a seaweed wrap. To say that this batter is delicious is an understatement! Give it a try and let me know your thoughts. I just love that I am able to find products that allow me to have my favorite foods again!!! Those close to me know that when I eat something I love I have an ear to ear grin and this was definitely one of those moments!

Dark chocolate nutty bits


I'm not much of a dark chocolate lover but Trader Joe's dark chocolate nutty bits are addicting! They are a blend of almonds, cashews, pumpkin seeds, pistachios and sweet toffee which are then dipped in dark chocolate and sprinkled with Fleur de Sel. They also contain 60% cacao.
A perfect treat to enjoy at evenings end and small enough to pack in your purse or luggage for a quick gluten free treat when traveling.
Give them a try and pick up a few bags. I was kicking myself for not doing the same.
You won't be disappointed!

Welcome






















Rewind back to March, 2007 and what I remember most vividly that day is my doc saying, "just hope you don't have it" as he walked me to the lab to draw my blood. My gut told me I did but I wasn't about to go there. A week later my lab results confirmed what my intuition was telling me. I was in total shock and felt completely overwhelmed. I never heard of Celiac Diease or of gluten for that matter.
I did a ton of research, attended a support group, met with a nutritionist and basically became my own advocate. I struggled with my diagnosis for a few months because living GF meant a huge lifestyle change for me. So much of my social life involved going out and spontaneously picking the hot new eatery in DC or Old Town. With time to accept my new life and continuously seeking out new information I now feel at peace with it all. Almost as if I never knew life differently. I have also recently expanded my Life Coaching practice, Embracing Transformation to serve those with Celiac Disease. It's a way for me to give back to this community. I feel blessed knowing I am supporting others through a difficult transition. The many things you will see on this blog will be recipes, product reviews, resources, personal experiences, GF restaurants and more. I am passionate about living GF to the fullest and supporting those to do the same.
Because living GF can really be delicious, trust me!!!!
